Two Year Anniversary!






In honor of our two year anniversary I posted some pics from our wedding day. Since then we've gotten a dog, I graduated college, and we moved over 750 miles to Texas. I love remembering back on my wedding day all the wonderful friends and family gathered together to watch us get married. It was by far the happiest day of my life and I'm so blessed to have Erik as my husband!

Looking Back

Our 2 year anniversary is coming up next Tuesday and I've been getting sentimental. I couldn't find any of our professional engagement pictures online and since I don't have a scanner, I decided to post some pictures of January 6, 2006, the day we got engaged. Next week I'm going to post some of our wedding pictures. Sniff, sniff, I'm getting f'clempted!



MMMmm, Pie


Mimi's Chocolate Pie

1 cup sugar
3 eggs yolks, save the whites
3 cups evaporated milk
6 tbsp. flour
1/4 cup cocoa powder
salt
1 tsp vanilla

Cook and store-bought pie shell in the oven per package directions. Beat egg yolks and evaporated milk in a microwave safe bowl. Mix flour, sugar, cocoa, and a dash of salt and pour over eggs and milk. Mix together. Microwave at 2 minute intervals until it thickens into pudding-like consistency. Add vanilla last. Pour into cooked pie crust. Beat the eggs whites with a dash of cream of tartar and 1/3 cup sugar and a little vanilla. Put on top of pie and place in broiler until brown-do not walk away.

Chocolate and Peanut Butter Squares

I found this recipe on the internet and I've made it for the past 2 Sunday lunches at church. Each time I return home with an empty pan, plus they are dang good. Make this. It's like Reese's cups only in bar form.

2 sticks butter
2 cups creamy peanut butter
1 1/2 cups fine graham cracker crumbs
3 cups powdered sugar
12 oz. chocolate chips

Melt 1 stick of butter on low heat in a medium pot. Add peanut butter. Add the 3 cups powdered sugar. Add graham cracker crumbs. Press this "dough" into a 9x13 pan. Melt the other stick of butter with the chocolate chips in the microwave. Once it is smooth spread it over the top of the dough. Refrigerate at least 30 minutes or overnight if you want. Devour while no one is looking.

Note* Once you add 2 cups of powdered sugar the mixture becomes very stiff and difficult to stir. When I made these yesterday I only added 2 cups sugar and they tasted just as good. They were just a little more crumbly. It also helps if you keep the pot over low heat while you stir everything in.

Nothing Special, Just Really Hot

We hope that everyone's summer is going well. Here at the Fuqua house we've been struck with bacterial conjunctivitis and boredom. Actually, I'm the one with pink eye and boredom, Erik just reads all day. Somehow I infected my eyeballs with bacteria after some debris got in them at work and I had to throw out my contacts and wear glasses for a week-yuck! I'm also trying to find hobbies to occupy my two whole days off during the week. I'm going to apply to be a volunteer at our local no-kill shelter. Erik says I can do that as long as I don't bring any animals home with me. That will be hard if a corgi comes through the door! Work is getting better. Every day I retain more information and remember not to do stupid stuff, so that's a plus. Erik and I are planning a trip to Austin in August to celebrate our 2 year anniversary and just relax before he starts school. By the way, it's ridiculously hot here in Texas.

Happy 4th of July

Our Fourth of July was kind of depressing. We had no family to picnic or barbeque with and no friends either. So Erik and I ate a huge brunch at IHOP (yum) then we saw a matinee showing of Indiana Jones and the Crystal Skull. We didn't even get to see any fireworks. I did remember during the day the troops in Iraq and elsewhere overseas that haven't seen their families in months and I felt for them. As much fun as it has been living in a new place, sometimes you get lonely for a familiar face. At least Erik and I have each other!
On another note things have been going better at work. I no longer feel as if I'm being hazed and I'm getting better at prioritizing my tasks and dealing with psycho patients. obviously being of sound mind is not a prerequisite for getting pregnant, and that is difficult to deal with! However, it is a joy to welcome new life into the world.
Erik is ready to start school, but he has about a month and half before classes start. I'm also ready for him to start school so we can meet people and get this law school thing going. He is going to be insanely busy and it will be just like when I was in nursing school, only no homework for me! Woo-hoo!
The pictures of Roxy were taken some time this weekend. This is her "little lamb" look. It's also her "I'm gonna go pee on something to get these people back" look. :-)
