Sopapilla Cheesecake

Last week we had a Mexican potluck at work and I was nominated to bring dessert. All the girls wanted Sopapilla Cheesecake, so I googled it and this was the recipe I found. I warn you, this stuff is ridiculously good.

Sopapilla Cheesecake
2 8 oz. pkgs cresecent rolls
2 8 oz. pkgs cream cheese, softened
1 cup sugar
1 stick of butter
1 tsp vanilla
more sugar
cinnamon

Roll out 1st can of crescent rolls onto a 9x 13 in pan. Pat it out to cover the bottom of the pan. In a medium bowl combine the 2 packages of cream cheese, 1 cup of sugar and vanilla. Spread this mixture over the crescent rolls. Take the second can of rolls and spread on top on the cream cheese mixture, stretching it out to fit. Melt the stick of butter in the microwave and pour it evenly over the second layer of rolls. Sprinkle the top generously with more sugar and cinnamon. Bake at 350 for 30 minutes. Devour and go into a sugar/butter coma.

Hey! I had this last summer in New Mexico!!! It was so good!!!! We will have to make it when yall come here for Christmas and let mom and dad try it
