Homemade Pancake Mix
This is one of Nigella Lawson's recipes from the Food Network website.
Pancake Mix
4 cups all purpose flour
3 tbsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 tbsp. plus 2 tsp. sugar
Combine all the ingredients into the container of your choice and store.
Pancake Batter
For each 1 cup of dry mix add 1 egg, 1 cup milk and 1 tbsp. melted butter. Heat a flat griddle over medium heat. Spoon drops of batter into whatever size you wish and turn the pancake when bubbles start to form on the surface. Add fresh blueberries, nuts, or chocolate chips to make them extra special.
